Cheryl used the old standby recipe for vegan chocolate cupcakes (which made about 30 mini cupcakes; the baking time was also 13-15 minutes). 
For the frosting, use your favorite vegan vanilla frosting recipe, or Pillsbury Creamy Supreme Vanilla frosting, and mix it with two drops of green food coloring and about 1/2 teaspoon of mint extract (it’s pretty strong—you don’t need much). After frosting the cupcakes, sprinkle them with hammer-bashed spearmint candies!

Recipe for Maple-Bacon Madness Cupcakes! These were a huge hit at our bake sale

Recipe adapted from Vegan Cupcakes Take Over the World/recipesforlaughter.com

Cupcakes

Ingredients:

  • 1/2 cup soy milk
  • 1/2 teaspoon apple cider vinegar
  • 1 1/3 cups regular white flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup maple syrup
  • 1/3 cup vegetable oil
  • 2 tablespoons brown sugar

Instructions:

  1. Preheat oven to 350 degrees. Line your cupcake pan with liners.
  2. Whisk together soy milk and vinegar in a large bowl. Set aside for a few minutes.
  3. Sift the flour, baking powder, and baking soda into a separate bowl and mix. 
  4. Whisk the maple syrup, oil, and brown sugar into the soy milk mixture.
  5. Add the wet ingredients to the dry and stir until lumps dissolve.
  6. Fill cupcake liners 2/3 full. For regular cupcakes (makes 12): Bake for 20-22 minutes. For mini-cupcakes (makes 24): Bake for 13-15 minutes. Mini-cupcakes burn easily so keep an eye on them! 

Maple Frosting

Ingredients:

  • Pillsbury Creamy Supreme Vanilla
  • Maple syrup
  • Vegan Bacon Bits, such as Betty Crocker Bac-Os or Bacun Bits 

Instructions:

  1. Beat the frosting with the maple syrup (to taste), spread on the cupcakes, and top the cupcakes with bacon bits. 
    You could probably make some fancy tempeh bacon bits, but this is the poor-college-student version of the recipe. ;)

Recipe for Vegan Apple Pie

This was her first time baking something vegan, and it turned out pretty awesome, from what I heard (I was in class and didn’t get to try her pie!)

Double Pie Crust

Ingredients:

  • 2 cups sifted all-purpose flour
  • ½ tsp. salt
  • 2/3 cup all-vegetable shortening
  • 4 to 6 tablespoons cold water 

Instructions:

Sift flour. Add shortening and salt. Cut the shortening until the mixture has the consistency of corn meal. Sprinkle water over mixture, mix lightly. Proceed with rolling.

Apple Pie Filling

Ingredients:

  • ½ cup organic sugar
  • ½ cup packed brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 5-6 cups of thinly sliced pared apples
  • juice of one lemon
  • Additional sugar and cinnamon for topping

Instructions:

  1. In a small bowl, combine sugar, flour and spices; set aside. 
  2. In a large bowl, toss the apples with some lemon juice. 
  3. Add the sugar mixture to the large bowl; toss well to coat. 
  4. Line a 9-inch pie pan with half the pie pastry. 
  5. Place apple filling into crust. 
  6. Roll out remaining dough to fit the top of pie. Cut a few slits in the top. Sprinkle sugar and cinnamon on top. 
  7. Bake at 375 degrees F for 35 minutes. Increase temperature to 400 degrees F and bake 10-15 minutes more or until golden brown.

We used Ghiradelli’s semisweet chocolate chips and left out the shortening. A spoon was used to make the swirls while the chocolate was applied, which was great fun. I think I will take up chocolate swirling as a hobby.

Ingredients:
